Over the past year, plant-based burgers, such as the Impossible Burger or the Beyond Burger, have made their way into mainstream food markets. They are now sold at grocery stores and fast food restaurants such as Del Taco and Burger King. As stated in the article below, faux-meat is bringing in an estimated $14 billion annually already and is expected to grow to $140 billion by 2029.The plant-based meats currently sold take the form of sausages or patties. Unlike the previous generation of plant based alternatives such as the Gardenburger, these new options appear to have emulated the taste and texture of their real meat counterparts, but the same has not yet been produced for other meats. For instance, you cannot find faux sirloins or rib-eyes which emulate the taste, texture, and flavor of their real meat counterparts. Part of the explanation for this is that these faux meats cannot be produced from a ground mash like the sausages or patties. Instead, these faux steaks must be 3D printed in order to reproduce the look, taste, and texture. 3D printing allows the producer to recreate the meat layer by layer so that the fat, muscle, and other counterparts all end up in exactly the right place. At the time of this article, Novameat Tech claims that they have produced something with the right texture and should be able to also emulate the look and taste by 2021. They also believe they can hit the market in 2022 with steaks that are cheaper than their real meat counterparts. If true, this could appeal both to those worried about the ethical issues surrounding meat consumption and those who are motivated solely by cost and self-interest.
